Potato salad with soy, scallion & sugar dressing

I know what you are thinking: She used that title because of the alliteration.

Well, yes, but the alliteration makes sense and I love alliteration. This recipe is so good. The dressing can literally be used as a marinade or sauce (great with pork loin), salad dressing, dressing for another dish or even a dip.

As I was waiting for the potatoes to cool down, I casually kept tasting the dressing…think whatever you like!

Prep time is about 10 minutes and cook time about 20 (for the potatoes).

8 potatoes (at least)
1/4c soy sauce
1/2c olive oil
3 tbsp brown sugar
2 tbsp red wine vinegar
2 scallions minced
2 garlic cloves minced

Combine all the ingredients for the dressing except the olive oil. I also added a few extra squirts of soy sauce. Stir that so the sugar combines. Whisk in the olive oil. The mixture will separate, but just mix it before pouring over the potatoes.

Boil the potatoes until firm, normally about 20 minutes. I used Idaho Russet but golden, red and others will work. Just keep an eye while they boil. Drain them and let them cool before chunking them up. Add potatoes to a bowl and add the dressing. Serve or let chill. They are great at room temperature or chilled!
